Hey Bev,

I saw some Succanat at Whole Foods this afternoon and think I might try it in my

KT. Though I will keep a parallel batch going just in case I get mold.

Have you ever had mold problems emerge from using evaporated cane juice? Or

organic tea?

processing. It does contain a little bit of the natural minerals found in

sugar cane as evidenced by it's color (not bleached!)

counts,...if it is " Certified Organic " .

Organic foods must be grown on soil that have not been treated with

chemicals: fertilizers, pesticides etc. I don't feel any need for those in

my diet in the form of tea or sugar, - or my Kombucha:-))

Kombucha needs " sugar " in some form for it's fermentation process.

To sweeten it after brewing, if it is too sour, I recommend Stevia. It is

from a plant and evidently has some health benefits. I also use Stevia in

hot tea with milk. I use honey sometimes but don't want to use too much

sugar of any kind so I put Stevia in my second cup of tea. Works for me:-))

Hi ,

I am guessing that " cane juice " is sugar cane juice. It isn't allowed on

the diet.

Sometimes it's hard to find foods that don't have sugar in them.
