My favorite is spelt... but there is also whole wheat, soy, kamut, millit, rice, quinoa and amaranth. Now I tried to do some searches for you on google.. I tried vegan, vegetarian and sugarfree.. none of them yielded to anything good. Mostly because they were all made with sugar, dairy, " sweetner " the evil kind, or processed flour. Now I did a search for spelt banana bread and I think you will be pleasently suprised with the nice recipes there! Definatly there for people who have food sensitivities! I'm one for shortening as much as I can so I don't have to type as much & besides, I like that name LOL Thanks for the research. I was thinking of all those flours you mentioned, but I didn't know if it was considered too much with the soy mixed in. I also don't know which ones are too dense etc. I don't want a brick to eat LOL I can't believe there aren't any recipes out there for us. It's all natural. Does anyone know if it's okay to use? I love it. It's expensive & hard to find, but I highly recommend it. I found one that I think sounds really good. The others I found all had milk, butter milk or yogurt (I can't eat that but maybe you can). There is a really good site called the stevia cookbook. Guest guest Posted September 7, 2004 Report Share Posted September 7, 2004 I went to my local Library and found a book by Gail Burton called " The Candida Control Diet " and it's loaded with recipies for everything from soups to salad dressings to deserts. She has a list of acceptable flours for we candida sufferers. She also has a suggestion for a sweetener that works very well. 100% Vegetable Glycerine. I haven't tried any of them yet, but I hope to soon. I'm going to be getting a copy of the book for my own personal library, too. Also, another cookbook I found in the library is " The Stevia Cookbook " . I forget the guy who work it. One problem, though. You'll have to adapt the recipes to use different flours. In the Gail Burton book she recommends not using wheat, rye or oat flours, but any other will work. I guess it's just a case of trial and error and finding what works for you and your taste. Yoghurt is a great alternative to sour cream. In some cases it tastes better.
