FOS is fructo-oligosaccharide, a subset of inulin, with shorter chains of

3 to 30 sugar molecules. When FOS is made this averages about chain

length 3 or 4, so not much of it is over 4 or 5. Many bacteria can use

this type of long-chain sugar up to and including 4, less so on 5. FOS

also contains 10% or more sugar in the form of monosaccharides and

disaccharides, which of course feed yeast.
