I'm not sure if fermented things feed more or less than sugar. Naturally fermented sauerkraut (doesn't contain vinegar and shouldn't be heated afterwards, like the canned stuff) should actually be good to eliminate candida, I would think. From what I have read, things like pickles only really bother 1% of candida sufferers, so there's no reason for the other 99% to not eat them. There seem to be harsh vinegars (which when I use them make me FEEL like they're wreaking havoc on my system) and milder vinegars (like ume). Aren't some reputed to be good for the gut?
