I mix it with homemade yogurt which I culture using yogurt culture mixed with bifo probiotics until it is very tart (no supar left). When I mix the inulin and yogurt, bubbles start to form. I think the bacteria are already fermenting? Duncan, I had a lot of gas when I started on your inulin. It's gotten better over the last 2 weeks, but will it ever decrease? Also, some interesting reading regarding inulin. The first article looked at inulin consumption (no probiotics) while on a high fat diet.
