Guest guest
It's very possible that that your child could be lactose intolerant, a very common occurrence in those of us with celiac/gluten sensitivity. Interestingly, while milk cannot be not tolerated, yogurt and hard cheeses (parmesan, some cheddar, etc) ARE tolerated. Yogurt has the live cultures and hard cheeses have a lot less of the casein. Sometimes people can tolerate sheep or goat milk products. I personally can't tolerate anything except greek yogurt in small amounts. Good luck figuring all of this out! Feel free to give me a call if you'd like more information; he may also benefit from a good probiotic, if he's not already on one.CheersBonnie Bonnie PrestiThe Sensitive Dinerwww.thesensitivediner.combonnie@...408-507-7037 On Mar 12, 2010, at 1:38 AM, wrote:celiacBayareaMessages In This Digest (16 Messages)1a.Re: Grain fed Meat? /Now Milk From: Ivers1b.Grain fed Meat? /Now Milk From: Pam Newbury1c.Re: Grain fed Milk? After much persistentcalling, I spoke to the person in charge of what the cows were fed. I foundthat while these cows were not fed wheat, they were sometimes fed a grainmash that included barley. They were fed different things on differentdays. This explained why the reaction to milk was inconsistent. Sincethen, we have avoided whole milk. We don't seem to have any problem withice cream, cream (I think because so little of the protein is in theseproducts), cheese, or yogurt (I think because the proteins are changed byenzymes in processing). This seems to work well for us. We have never hada problem with meat (plain, unseasoned meat, that is). While I have never seen any tests of cow's milk for gluten, the evidence ofmy observation of my child's reaction plus the results of my investigationinto the feeding of dairy cows was all I needed to make a decision for myfamily. Each celiac must make a decision they are comfortable with as totheir tolerance of milk. Perhaps if enough celiacs raise the issue, research will follow with testingof cows' milk, and who knows, maybe producers will follow with milk fromgluten-free cows.PamFrom: [mailto: ]On Behalf Of IversSent: Thursday, March 11, 2010 9:26 AM Subject: [ ] Re: Grain fed Meat? /Now MilkFirst, cows are very seldom fed gluten containing grain. What I should have said was that any milk that contains protein (whole milk, low fat, 2%, skim milk, etc) seems to be a problem. Cream, butter, sour cream and other dairy products that are mostly the fat (cream) where the lighter milk that contains protein has been separated don’t cause a problem. Hopefully that makes more sense.PamFrom: [mailto: ] On Behalf Of HarperSent: Thursday, March 11, 2010 12:51 PM Subject: Re: [ ] Grain fed Milk?Does non-fat milk bother you? This means that if a non-celiac mother is nursing a baby or a toddler with confirmed celiac disease, the mother needs to maintain a gluten-free diet. If neither the baby nor the mother has confirmed celiac disease, the mother should continue to eat gluten, even if there is a history of celiac disease in the family, because there is a chance that exposure to gluten in breast milk will actually help the baby to develop a normal immune response to gluten. -----Original Message-----From: Cheryl and Jim Lucas <csjdlucashotmail> Sent: Wed, Mar 10, 2010 8:34 pmSubject: RE: [ ] Grain fed Meat? Can you verify the breast milk statement? So what about grain-fed cows? Would there be gluten in cheese and milk? If not why not? The menu is flexible and offersmain entrees and side dishes. The pricing should be around $28 for a mainentrée for a small family. Sides run $10 - $12. Delivery will be onMondays and Thursdays (you can choose one or both). Delivery runs all theway from San up to Hillsboro. The food will be cooked with dedicated equipment and when no other glutenchefs are around to avoid any risk of cross contamination.
