Cauliflower & Ginger Soup 2 T. olive oil or butter 2.5 lbs. cauliflower--about 1 head 1 lg. onion, chopped 1 thumb (T) fresh ginger, sliced into two/three chunks 1.5 tsp. salt 1/4 tsp. pepper 3 cups chicken or veg broth (we used chicken) Warm oil or butter. Add onions and cauliflower. Saute over medium til well coated. Cover for ten minutes - stirring a couple times. Add ginger, salt and pepper. Stir well for 30 seconds. Add broth. Bring to boil. Reduce heat. Cover 30 minutes Remove ginger (optional) Transfer to blender or use hand-held blender and puree Return to pan if it needs warming.
