If I crush mine slightly with the knide handle as its easier to peel, then chop into small bits and then give a couple of chomps with the teeth, is that OK??? thanks! Persian Hi, Persian: Well, it's my understanding that it's best to press it, but let it set a few minutes first before you press it. I bought a cheap garlic hand-press at the grocery store for a few dollars. The whole reason that we press it is to release the allicin in it-- that stuff that makes it work for us. The digestive juices become diluted when there is liquid added. They need to be at full strength to do their job efficiency. :-) :-) I remember my mother telling me this when I was a child!!! The cheap ones appear to be cast aluminum, and when you press garlic with it, it produces some dark colored juices. I spent a little more and got a stainless steel press. Garlic flushes heavy metals from the body, from my way of thinking you really have to be careful what you use to press it with or it will draw out the nasty metals from it.
