Evidently when you ferment them long enough the lactose changes into galactose, which is another type of sugar. I couldn't figure out why kefir and yogurt weren't good for candida, and finally I found out. ==>Anyone with candida will do better not eating kefir or yogurt because you are still getting sugar, which is galactose. I hadn't really thought about that. It makes sense because our bodies break down lactose in the same way. It's my understanding that the enzyme lactase breaks lactose down into galactose which is much easier on our digestion (supposedly), but we all know that pretty much ANYTHING ending in -ose is " sugar " . I wouldn't have necessarily expected that to be TOO much of a problem since we do get some sugar from our veggies, but I can certainly understand the connection. When I added it back in, I had a bad flare with itching and burning. I now know that Bee is right on again!!
