I think I'll try it. What veggies do you use in it? I did hear recently that if you heat olive oil or use it to cook with it changes the chemical structure into a damaging, rancid oil that is not good for us. Its best to use it straight from the bottle in salads, not heated. But also, I heard that coconut oil is one of the safe oils that can be heated at higher temps. So about three weeks ago I ran out of coconut oil. My life being busy I figured I'd get some more next time I got a chance, and continued on just using olive oil until then (usually I use half and half of each). At around the same time, purely by coincidence (I really wasn't trying to experiment, it just happened) I decided to start cooking the daily 6 cloves of garlic I eat (before I was mixing it in my food raw). I just wanted to see if it had better flavor, and it was a total coincidence the two things happened at around the same time. After a short time with no coconut oil or raw garlic I noticed some really bad symptoms cropping back up.. symptoms I haven't had since I started this program more than 8 months ago fully abstinent. I experienced acne breakouts, itchy anus (sorry if TMI), fatigue, and headaches (that's all the stuff I remember). Again I hadn't experienced these symptoms since getting on this program. I couldn't figure out what the heck was going on. I didn't cheat, I was eating the same foods as usual, I hadn't started any new meds. Then after two weeks of progressively worse symptoms (including a lack of weight loss which has been very consistently at 2-4 pounds a week since starting) and sitting trying to figure out what was wrong I realized what I had changed. So one week ago I went out and stocked up on coconut oil again and stopped cooking my garlic. I had die off symptoms such as bloating, gas, and alternating loose stools with constipation. My skin is clearing up again, my butt isn't itching anymore, I've lost 2 pounds this week so far, I have TONS of energy back again and no headaches. I know from past experience that the bloating and gas will go away with time, as the die-off symptoms lessen. But it just shows me how important coconut oil and garlic are for my program. I also wanted the share the info for the sauce I use on my stir fries that tastes really good. I mix melted coconut oil (I dont heat it more than is necessary to get to a liquid because I don't want to damage the oil - better when it's already melted) and raw minced garlic and sea salt all together in a bowl. Then I take my stir fried meat (which I stir fry in a small amount of my daily allotment of olive oil) and my steamed veggies and mix them all together. I've been soaking my veggies a bit in water before steaming, and this makes them moister so their juices mix in with the coconut oil sauce and make a rich broth. It's yummy! I don't know why but when I mixed the garlic in with the veggies and meat before, without pre-mixing it with the coconut oil it had a different flavor, and I'd get pockets that were overly-garlicky. So premixing is important. I believe that trying to eat your garlic and coconut oil as uncooked as possible gives you lots more benefits than when you cook it. It's a lot like Aioli, but it has coconut oil instead of olive. Also I don't use lemon juice or eggs, but you can certainly try adding those. Yes, ideally I want to stop eating olive oil all together, and switch to either only coconut oil or a combo of coconut oil and lard or tallow. Unfortunately I have had a hard time getting the funds together to get lard or tallow and can't find it locally. So in the mean time I use the olive oil and coconut oil until I can get a replacement. I also need to find a good place to buy coconut oil in a bulk gallon size. I want my coconut oil to be inexpensive yet high quality.. am I dreaming? You should have seen how it turned out when I just tried to make a simple bone broth. Plus I just don't have time to cook stuff like this.. wish I did. I'm all for buying the lard and/or tallow, it's just that the links I found from others on this site led me to two problems. One site sells this lovely lard for like $5/pound which is a good price. Problem is that they have a flat rate for shipping which is $16!! Seems a bit absurd to me to buy a $5 item and even try it and spend $16 for shipping. I may end up doing it anyway very soon here anyway, but that shipping price irks me. The other site with lovely looking tallow has a $75 minimum purchase. I keep spending my money on other things but I need to make that a priority. I'm quite nervous though that I'll spend my money on this stuff and I will hate the taste or something and have wasted my money. Val > > --At the grocery store you can find suet (for the birds?) I go to my quality butcher and ask for beef and or pork fat. I take the chunks home and put it in separate deep fry pans (or a dutch oven would work) I melt it down over medium to not too high heat. Mom always filterd hers so I do the same. I take my big screen strainer over a sauce pan and line it with paper towel, klenex or coffee filter. I pour the grease in while it is still warm to hot. After it filters into the sauce pan I pour it into stainless jars (wal mart had nice ones with glass lids) that sit next to my stove so it is always there ready to use. I don't refridgerate it. Lard seems to be basic in their diet. I bet you'd find a lot of interesting things there that Bee talks of. We have one here in Kalamazoo that is wonderful. I just wish I could speak their language. I just point and smile. Any way they always have a barbecued pig with all the parts, feet,kidneys,tongue, skin. Its self serve so I just pick what I want. I like the tongue the best (I would never have tried it but one of the women there told me that is the best part and gave me a taste. I agree.) My thought is that this market is like home in Mexico so I would think that in San they must have one like it. I bet once you fry chicken in real lard you never go back to anything else. That cost around 40 bucks, and for the other 35 I ordered some steaks to share with hubby, so he won't be too mad about me ordering stuff from this place. It wouldnt hurt to try. I am looking into the farmers around here to see if they sell it. Not sure if it would be rendered or not. I have gone to at least 5 of the local farmer's markets in this area and none of them sell meat except one that sells fish. They all sell various fruits and veggies, beauty products, fresh breads, popcorn, etc. but no meat or meat products that I've seen (and I've looked). I've looked up a few different resources for local farmers in my area and haven't had any luck. The best thing I found was a grass fed beef farmer about an hour and a half away that sells 1/4 cows for a decent price. But I have a hard time sometimes coughing up that money in one chunk.
