hi bee and shirley

i didn't find the recipe in the files that bee mentioned. but there is

a recipe for my suaerkraut relish, which is blended up the same way

that cabbage for rejuvelac is blended.

i've been searching old messages, as we had this conversation a few

months ago, but haven't found it yet.

anyway, here are some thoughts and what i can remember from the last

conversation:

make it into a salsa by mixing it with chopped tomatoes or tomatillos,

cilantro, onions, garlic, peppers, sea salt etc...

add it to vegetable soups

add lemon juice or raw apple cider vinegar, some crushed minced garlic

and sea salt for a quick condiment to serve along with meats, poultry

or fish.

also, i do make kimchi these days from regular green cabbage with all

the other kimchi ingredients, in a blender. (using regular cabbage

began out of necessity when i couldn't get any nappa cabbage or bok

choy, and now its back in the stores but very expensive compared to

regular cabbage). its like kimchi relish. i love it! i have been

adding the onions and radishes after the cabbage, hot chiles, garlic &

ginger is buzzed up in the blender with some water. stir in the sea

salt and let it ferment.

maybe you could try something like - a little bit of fresh blended

cabbage mixed with rejuvelac cabbage, some fennel seeds, or caraway,

or dill with sea salt.

i am a big fan of the relish style ferments. they are easy to make,

and easy to digest since the cabbage pieces are already quite small.

hope that gives you some good inspirations: let me know what else you

come up with and we'll make a recipe file for it!

Folder, or I could add it to the cabbage rejuvelac recipe too - what do

you think>

The recipe for kimchi (Korean sauerkraut) is in the Recipe Folder under

Fermented Drinks & Foods - is that what you meant by " didn't find the

recipe in the files?

~~~no, i thought you meant that there was a recipe for making kimchi

out of the cabbage leftover from making rejuvelac, as shirley had

asked about recipes using the leftover cabbage.

~~~anyway, i will make that file right now, and if anyone else has

good ideas for using the leftover cabbage, we'll add them in as well!
