Guest guest Posted June 7, 2004 Report Share Posted June 7, 2004 Robin: I don't want to burst the bubble, but I do want to offer two cautions regarding GT's Kombucha tea. 1) According to Sally Fallon in her book " Nourishing Traditions, " non-organic tea is high in fluoride. It does not appear that GT's is organic. (If you ferment the K tea yourself, you can of course use organic tea :-) 2) According to the Kombucha info I've read, the culture should be allowed to ferment for at least 3 weeks to allow the sugar to be most fully consumed by the culture. (The longer the fermentation period, the more sour the K tea will taste; thus K tea that is allowed to ferment for 7-10 days will taste much sweeter than K tea allowed to go for 21 days.) Perhaps you can call GT's and ask how long they typically ferment their K tea. Of course, if you ferment it yourself you can ferment it for as long as you wish. Yes, it does sound like I am lobbying for you to ferment it yourself :-) I only want to say that, although I thought the process was very daunting at first, it is actually quite simple. I'll gladly share my experiences if anyone is interested. By the way, Sally Fallon also says that white sugar, rather than honey or Rapadura, and black tea, rather than flavored tea, yields the highest amount of the beneficial glucoronic acid.
