What do you do with fennel? I would like some ideas as I just bought one fennel

plant to add to my herb garden. Val

Hi Val, I use my fennel in most of the recipes Suz listed below. I also add the

tough part of the bulb in my meat stocks just as you would use the celery

stalks.

My fevourite fennel salad was:

Fennel salads - tomato and fennel thinly sliced.

- Red oranges and fennel thinly sliced

Can't have it now because red oranges are not allowed in the diet.

okay - my thoughts on fennel...

first - yum! i love it raw or cooked.

fresh fennel bulb is good roasted, sauteed, braised, grilled or raw-

slivered into salads.

its delicious simmered into tomatoey seafood stews, or roasted with

chicken.

i love it sliced and simmered in a little bot of water until quite

soft, then seasoned with salt & butter as a side dish.

fennel seeds are what makes italian sausage taste like italian

sausage. ground fennel seeds are good in savory soups and indian

curries. fennel seeds go great with pork.

the feathery green fennel tops (look similar to fresh dill) are a

nice garnish for soups & salads

in the recipe files you will find 2 fennel recipes in the vegetables

section and 1 in the salads section.
