Val Hi Val, I use my fennel in most of the recipes Suz listed below. I also add the tough part of the bulb in my meat stocks just as you would use the celery stalks. My fevourite fennel salad was: Fennel salads - tomato and fennel thinly sliced. - Red oranges and fennel thinly sliced Can't have it now because red oranges are not allowed in the diet.
