Would Kimchi recipe work for

you bet! i have been making kimchi lately with regular green cabbage,

buzzed in the blender like you do for rejuvelac or my sauerkraut

relish recipe (both in the recipes files).

i just put the cabbage, along with chopped garlic & chopped ginger in

the blender and buzz it with water. then i put it in my fermenting

vessel, add chopped radishes and finely diced onions or chopped

scallions. add sea salt, mix it up and let it ferment. it is so good!
