i appreciate all your help and look forward to your posts. It is

inspiring to know someone has lost so much weight on the diet, when

it gets hard i think about that fact :) Thanks

Homemade Mayonnaise

Note: This is the basic recipe that can be used as is or in other

recipes that follow. It contains no vinegar and no sugar.

Making mayonnaise is quite simple although cookbooks caution about

how it may curdle and offer remedies for it. As long as you drizzle

the oil into the blender slowly while it whirs you will have no

problem.

1 egg

2 tablespoons freshly squeezed lemon juice

1 cup extra virgin olive oil

1 teaspoon mustard, optional

1/4 teaspoon powdered kelp, optional

1/4 teaspoon sea salt, optional

-Beat egg in a blender on low speed.

-Add lemon juice and seasoning, if desired.

-Continue to blend and slowly drizzle in the olive oil.

-Continue blending until smooth.

Makes 1-1/2 to 2 cups. Stores for 2 to 3 days in the refrigerator.
