It contains no vinegar and no sugar. Making mayonnaise is quite simple although cookbooks caution about how it may curdle and offer remedies for it. As long as you drizzle the oil into the blender slowly while it whirs you will have no problem. 1 egg 2 tablespoons freshly squeezed lemon juice 1 cup extra virgin olive oil 1 teaspoon mustard, optional 1/4 teaspoon powdered kelp, optional 1/4 teaspoon sea salt, optional -Beat egg in a blender on low speed. -Add lemon juice and seasoning, if desired. -Continue to blend and slowly drizzle in the olive oil. -Continue blending until smooth.
