My body just produces too much insulin in response to eating any carb whether complex or simple. It also does this in response to fruit, the only fruit I can eat is a tiny amount of grapefruit and a small amount of berries which I eat as part of my evening meal with a little single cream. On the mercury issue, cold-processed whey plus selenium produces glutathione, your body's natural detoxifying and chelating agent, inside the cells where 90% is needed.
