go to this site to find gluten substitutes but make sure to pick ones that

have low sugar, low carbs, too.

Good advice I'm sure. As for Oat, as far as I know it doesn't have

gluten. I hope not as I'm about to try eating it,

and I certainly don't want gluten.

oh wow... I didn't know spelt had gluten

I have been eating spelt bread because I thought it was gluten free

yes, but if it is SPROUTED it changes. I believe that the sprouting process

changes it so it does not have gluten. .... even with wheat.

I just found these great sprouted grain tortillas from food for life. called

Ezekiel 4.9.

Ingredients:

Organic sprouted wheat, filtered water, organic unhulled sesame seeds,

organic sprouted soybeans, organic sprouted barley, organic sprouted millet,

organic sprouted lentils, organic sprouted spelt, sea salt.

I can't wait to try these with eggs or vegetable wraps. I never thought I'd

get so excited over NEW foods. LOL

i understand that if we eat oats they should be WHOLE OATS , or STEEL CUT

oats.

this advise was taken from a book i read called THE COMPLETE CANDIDA YEAST

GUIDE BOOK. the book has some interesting info, especially on eating NUTS, it

seems cashews, and walnuts contain a lot of mold and should be avoided or at

least cooked.

The link only specifies wheat free, not gluten free. Here is some information

excerpted from a health site that sells gluten free products.

Gluten Free Flours

Gluten is the protein which remains behind when wheat flour is washed with water

to remove starch. Wet gluten is like soft rubber which in bread-making binds the

flour and water into tough dough.

Glutenin and gliadin are the two major protein components of wheat gluten. When

gluten was fractioned with solvents, it was shown that toxicity resided in the

gliadin fraction. The gliadins of wheat are members of a class of cereal

proteins called prolamins. The prolamins in rye, barley, oat and other cereals

differ in their chemical and toxic properties. However, exact nature of the

toxic factor is still unknown. Thus it is only a portion of the gluten which is

toxic to those with allergies. Many workers in the medical or nutritional

aspects tend to use the term gluten as synonymous with the toxic proteins of all

cereals, but actually gluten is not a suitable term for the protein of cereal

grains other than wheat.

Uhm, that's the point of the list.... to show you all wheat substitutes with

or without Gluten....????? since some people don't know, obviously, that

certain alternatives to wheat still have gluten..... right?????

oh wow...

I sprout my own grains so this is exciting thank you for sharing!

So this means wheat is A-ok as long as it is sprouted??

Could you give me more information backing this up

I can't find anything to support that sprouting removes the gluten but here is

an excerpt that maintains it does change the chemical or molecular composition.

SPROUTING

After doing much research, I believe that sprouting is one of the big answers to

the nutritional problem. Sprouted anything is very, very nutritionally packed,

particularly the grains and legumes. Sprouting increases the nutritional value

from 400% to 600% over the original seed. For those who are allergic to wheat in

the seed form... sprouting changes the chemical composition of the wheat so that

such allergies are usually no longer a problem. Of course organic non-hyrid

seeds are the best if you can get them. In essence, in sprouting, you are

growing a very efficient, super concentrated, nutritionally packed mini-garden

on your counter top!
