I make a wonderful and easy pea soup that is very filling.

HEre it is:

in the bottom of a large pot put some olive oil

add to that some finely chopped onion and saute.

Grate one carrot into the pot and saute as well

Next add I bag of frozen peas to the pot. Fill with water to the top.

Add pepper and salt to taste. (depending on your food sensitivies you

can use sea salt but I use chicken boulion flavoring.)

Let this boil.

You can chop up some dill and add it towards the end of cooking

Dumplings also go into the soup if desired

THese are made by taking some flour in a small bowl and adding an egg

and water. This should be made into a pasty texture. Use a spoon and

fork to drop into the soup and let it continue to simmer on low.

My hubby loves this soup and can easily make a meal out of several bowls

of it.

I appologize for not giving perfect measurements of ingredients. I never

use them and this soup is foolproof. BIG carrot or little carrot does

not make a difference. I like lots of onion so personally I use two, my

mother in law uses one.

.... oh ... chick peas are also a great food to eat in general. Those who

need carbs, add them to your salads. They are a perfect snack when you

add some lemon, salt and pepper. You cant get much easier than opening

up a can!
