Guest guest Posted June 27, 2001 Report Share Posted June 27, 2001 Hi everyone Just wanted to share my muffin recipe for those who can tolerate it - probably those who have been on the diet for more than 3 months - or those who are o.k. with carbs. Anyway it is very yummy! 2 cups of flour (mixture of rice, corn and soy) in that order of concentration 1 tsp of Bicarb of soda 2 tsp cream of tarter 1/2 tsp cinnamon 1/2 tsp mixed spice 1 cup of blueberries (these are very tart and low in sugar) 2 eggs 3 sachets of stevia 1/2 cup pure natural yoghurt 1/2 cup pear juice plus a couple of mashed up pear halves (extra rice/soy milk if needed) Bake at 180 degrees for 15-18 minutes. makes 1 dozen. I came to the conclusion about a week ago, I was sick of starving, and was going to find some recipes that I could tolerate. These items are fine by me, I know others may not be able to tolerate all of them, but IMPROVISE AND DON'T STARVE YOURSELVES. You are not doing your bodies any favours by starving it along with the candida. I lost have lost so much weight over the last 10 years with diets for candida, that I was starting to feel and look like a walking skeleton. I also feel better when I eat carbs. They give me much needed energy. Unless you have a lot of weight you can afford to loose, don't be too restrictive. It is better to take a little longer to get well, than to feel and look awful. You body needs food to remain strong to help overcome this disease. I have found digestive enzymes to be really helpful and have realised that I no longer have the awful brain fog and spaced out feelings anymore. I still have the itching, but I am hoping this new type of Olive leaf I am taking will help with that. I actually felt die off the first day from it, not much, but its a start. I have never had die-off that I am aware of. I am going to experiment with bread tonight made with different flours - so if anyone is interested, I can post those recipes if they are successful.
