I'll try making some spelt-millet muffins later this week, and let you know how they turn out. Right now, I'm looking through recipes for 'conventional' muffins and working out how I can adapt some of them. If I hit upon a really good recipe, I'll post it! I understand that carrot is ok in moderation, so maybe I'll make some carrot muffins (hopefully it will taste like carrot cake...) BTW, alcohol-free natural flavorings such as lemon, lime or vanilla are very nice to add to baking! Am a new member who just joined the group and there's more that I really need to know prior getting into the cooking and the dieting. E.g. one of the physicians I visited recently told me that I had high viginal candidiasis and if not treated early enough might lead to sterility i.e. " lacking the capacity to give birth " I need to know how true/relevant that is. I also mentioned a couple of days ago that a local organic & allergy sensitive cookie company is going to develop a line of cookie for candida sufferers. I have asked them to keep me informed!
