Guest guest Posted April 3, 2010 Report Share Posted April 3, 2010 I have been a vegetarian for 34+ years and, as with most vegetarians, beans and bean products are the basis for our protein. When people do not like meat, I have often wondered if it has to do with the US diet which is primarily animal based for protein. The other possibility could be cultural--beans were the food of the poor and everyone wanted meat. Well, now we know beans are nutritionally far better for you than meat, especially, the farm raised meat that most people eat. I use beans for all kinds of things from soups and stews to thickening things by pureeing them. I like the taste and texture. Yes, canned beans are truly awful as far as taste and texture. I soak mine and cook them from scratch before I use them. Most commercially fixed foods in restaurants use canned beans and if that is all you have had, I would suggest cooking them the " right " way. Most beans are bland so I use lots of spices including curry, chili, Italian, etc. I read the article about people who have more taste buds not liking beans. I am just the opposite--I, as a tiny child, refused to eat meat, according to my mother. I used to sneek and feed my meat to the dog. You can imagine that, as a child of a meatcutter, I became malnourished and very skinny. Since my mother was a really bad cook, the canned vegetables and boiled potatoes with meat juices on them were not very tasty either. My biggest problem with food, is that with the gluten allergy that came with lyme, I find it very hard to eat out. And, I do not care much salads so I get very discouraged with restaurant faire. Kathleen Ok, so what can I do to make beans more palatable? I've tried various type recipes and nothing makes them work for me.
