My Anti-Gliadin test was Postive but I never did have any of the usual reactions to Gluten that I'm aware of. But my immune system was severely depressed & 7 months on a Gluten-Free Diet has improved on that test. Cheese is safe? What are you saying, that some Cheese has Gluten? I mean, those who have negative test results but still can not tolerate gluten. These people are called gluten sensitive or gluten intolerant people. Most cheese are gluten free but you must read the labels. A big % of the immune system is in the gut and the gut microbiota play an important role . A big part of gut flora live on the intestinal villi. There is not clear evidence yet if gluten sensitive people get villi damage in the same way Celiac guys get, but probably yes. What I want to say is if you get a flat villi because an autoimmune reaction to gluten, you lose the small finger tips which are responsible for nutrient absorption and the gut microbiota lose its home. Now, try to realize how big this damage is. Get a read about the way gluten damage the intestinal villi and you will see how many bad consecuences it bring. Too much intake of L Glutamine can drop down Glutathione levels. I take l-glutamine every day and get no headaches from it. Monosodium glutamate is different from l-glutamine. My lyme doctor who originally put me on to it was going to have me take 3 of the 1000's 2-3times a day. That seems like alot. So it helps your cravings? Well being is increased when one is in anabolic or growth mode, maybe that's what you experienced.
