Guest guest Posted December 21, 2006 Report Share Posted December 21, 2006 Splenda Peanut Brittle Ingredients: 1-cup splenda 1-cup light corn syrup 1/4 cup butter 1/2 cup water 2 1/2 cups unsalted peanuts 1 1/2 tsp baking soda <sifted> Directions: 1-Butter a jelly roll pan... 2-Combine splenda, corn syrup, butter and water in heavy sauce pan... Cook over medium heat... Stirring constantly... When mix comes to boil turn down to med-low heat... cook till candy thermometor reads 275 * F.. About twenty minutes... 3-Add the nuts and cook till you reach 295* F... 4-Remove from heat and add the baking soda... Stir quickly... Pour over the buttered jelly roll pan...
