Penny, this sounds wonderful. Would you be good enough to clarify something for

me please?

Are cucumbers peeled? Which setting (Variable number? or High?) do you use?

Thanks, Kathy in Washington

think I could do the same thing in the vitamix or just continue making it the

In my experience, cooking veggies like onions and broccoli and carrots (I think Leeks would fall in this category) brings out a different (sweeter) flavor and "cooking" them in the Vitamix doesn't do the same thing. I don't think they really get "cooked" in the VM - just heated up. Which from a nurtritional standpoint might leave some enzymes "active" - or at the least might not have as adverse an effect on some vitamins??? BTW and FYI... I've placed my thermometer in my tortilla soup at a show and it only gets up to 165Regards,Lea Ann SavageSent via BlackBerry from T-MobileFrom: "Penny" <penbate@...>Sender: Date: Sat, 31 Jul 2010 19:54:05 -0000< >Reply Subject: Cucumber Soup I usually make Cucumber Soup and take a lot longer to make it with a food processor (small) and then a lot of mixing.
