Hi... I'm a lurker, but have some info for those interested in Dr. Budwig's

nutritional program.

Below are three key recipes from Dr. Johanna Budwig's Oil Protein Diet Cookbook;

the mayonnaise/dip/dressing, the butter substitute and her cereal. If you add

these three things to your diet, you can dramatically improve your nutritional

health. These are very simple and made with unprocessed foods that are good for

all of us, and critical for anyone who is unwell. Please feel free to send

these to other groups or people who can use them. I would be happy to send

more of her recipes, especially information about the diet for the seriously ill

from this book.

KEY RECIPE NO. 1

Quark Flax Seed Oil Mayonnaise

(Basic Recipe)

Ingredients:

3 Tablespoons Flax Seed Oil

3 Tablesoons Milk - No specification in her recipe as to fat content for this

milk.

3 Tablespoons Quark - In the U.S.A. Quark is not readily available so I use

low-fat cottage cheese from a health food store.

1 Tablespoon Lemon Juice and/or

2 Tablespoons Apple Cider Vinegar

1 Tablespoon Mustard

1/2 Teaspoon Yehi-Herb Salt - I think this is also called Kosher salt (unrefined

and unbleached).

Preparation:

In a blender, combine oil and milk with Quark. Add mustard, lemon juice, vinegar

and salt.

Following are variations. All these mayonnaises are recommended as salad

dressings, dips and sauces for raw salad platters. They can be further varied

by combining with the recipes for salads and with sauces.

Use basic recipe and add:

1. 1 Tablespoon marjoram, blend well.

2. 1/2 Tablespoon marjoram and 1/2 Teaspoon dill.

3. 1 Tablespoon dill, finely chopped, or powder.

4. 3 Tablespoons Soya/garlic/honey recipe (*see below)

5. Puree 5-6 Dill pickles with the mayonnaise. The herb vinegar can also be

used if preservative-free.

6. 1 Tablespoon finely chopped chives, stir in, AFTER blending the mayonnaise.

7. Puree 100-200 g parsley with the mayonnaise.

The basic recipe or any of the above variations are further modified by adding 1

Tablespoon pumpkin seed oil.

* Soya/garlic/honey sauce dressing recipe:

3 Tablespoons Soya Sauce

3 Tablespoons Water

2 Tablespoons vinegar

2 Garlic Cloves

1 Teaspoon Honey

RECIPE NO. 2

OLEOLOX

Use in place of butter or margerine (spread for bread, vegetables, rice, soup,

etc).

Ingredients:

250g coconut fat - (8.8 oz) - Use only high quality unrefined cocoanut fat at

your local health food store.

1 medium size onion

10 garlic cloves

125cc Flax Seed Oil (1/2 cup) - CHILL in Freezer for 1/2 hour

Preparation:

Cut onion in half and brown slightly in 250g of heated (100 degrees C) coconut

fat. Cook for approximately 15 minutes, add 10 cloves of garlic and heat

additional 3 minutes only.

Strain fat through a sieve into chilled Flax Seed Oil, stir to mix. Store in

refrigerator and bring to the table in small quantities as needed.

NOTE: As a rule, Flax Oil and OLEOLOX should never be heated. If you prepare

sauces according to my (Dr. Budwig's) recipes, the sensitive unsaturated fatty

acids of Flax Oil are somewhat protected by trhe sulfhydryl group of spices used

(e.g. pepper). Be careful not the heat the OLEOLOX more than 1 minute for any

recipe.

KEY RECIPE NO. 3

LINOMEL

A Cereal (created and patented by Dr. Budwig. It is made from cracked flax

seed, honey and milk powder. If you cannot find it, call toll free

1-800-445-3529 OR a substitute can be made as follows:

ratio (6 = flax seed), add a little milk powder.

Linomel-Muesli for breakfast:

Cover with a layer of chopped or sliced fruit (whatever is in season), can be

mixed or one fruit.

Cover fruit with Quark/flax Oil Cream (recipe follows)

Garnish with chopped nuts (NOT PEANUTS) or more fruit.

Quark/Flax Seed Oil Cream

(Her recipe book does not give portion sizes for this recipe)

Honey

Flax Seed Oil

Quark or cottage cheese or yogurt

Milk

Mix honey and flax seed oil... you can use blender if desired. Add Quark or

cottage cheese or yogurt in small portions and stir until cream is smooth and

oil has been absorbed, a little milk can be added.

This mixture can be flavored differently every day by adding nuts, banana, lemon

juice, orange-lemon juice mixed in a ratio or 2:1, cocoa, shredded coconut,

rosehip pulp, fruit juices - always added last, vanilla, cinnamon, pineapple,

etc.
