Guest guest Posted April 14, 2006 Report Share Posted April 14, 2006 I ran mine through the juicer, and ran some green apples and a carrot through at the same time. Beets will make your urine pink for a day, so don't be alarmed. The tops and stems are delicious & nutritious steamed or lightly boiled with a tiny pinch of sea salt. I peel off the rough part at the top of the large root part, cut off and dispose of the " hairy rat tail " part. since it usually harbors some soil, sand etc, then scrub the rest of it well. If they were not " organically grown " then wash with white vinegar and or Vitamin C then rinse well with purified or distilled water. The root can be boiled, but this will destroy a lot of the vitamins and enzymes, so juicing is best. You could try to eat it raw if you have really good hard teeth and strong jaws. Cut it up in little pieces first. If you have a julienne gricer or cutter (skinny french fries size) this would make them easier to eat raw, but a lot of work since that root is quite hard. BUT...make sure you dilute it with say w/ carrot & celery & apple - something else appealing. Drinking straight beet juice is much too strong & will definitely throw your system into chaos (sp??). I think you can juice the tops too but they are bitter. Beet juice is a wonderful liver cleaner! It will also stain your hands & counter tops! Andy Cutler really knows his stuff. The book is not an easy read: Cutler is not a writer, he's a chemical engineer. Still, it's an awesome book and I dont think you'll be sorry. I've been drinking a combo fresh juice with beets for about 3 or 4 days. My urine hasn't turned pink at all, however this morning I noticed my bm was " leaking " a pinky color.... Any thoughts?
