Almond milk

Therese,

You do not need to dry the nuts before making almond milk as you just

put them back in water anyway. I soak the nuts, rinse and then make

the milk.

Do you dehydrate your almond pulp, or use as is?

FYI for everyone. I soak my raw

almonds in salted water

like the NT recipe. Then I dehydrate

them at a low temp in

either the oven or the

dehydrator. When they are finished,

I make almond milk out them..... I

put 1 cup them in my

Vitamix along with 4 cups of spring water, a pinch of salt

and a little bit of vanilla. I line

a fine strainer with a flour

sack kitchen towel and drain it.

Sqeezing most of liquid

out after it's mostly drained.

Then I take the leftover "pulp" from

the kitchen towel to

use as almond flour. That way the

almond milk is made

with raw soaked almonds. Then it's

by-product (the "pulp")

is used for baking.

Re: Sauerkraut

The book, Wild Fermentation has a

great recipe for

sauerkraut and tons of other

fermented goodies. I

highly recommend it.
