Hi ! I have been meaning to thank you for all of the work you did for the FourFold Path Conference . . .I find, here in Miami, that it can take three or so weeks to become vinegar, or at least to have no really detectable sweet taste. In the summer it goes faster--ten days? I would say I get a normal brew in five days in the summer here. I just brew it until the sweet is gone, then (because I don't usually refrigerate it) keep using it as it gets more sour (even after I move the scoby to a new batch). I try to keep several batches going at once so I don't run out.

I am using plain organic black tea and organic white sugar. I have used all sorts of teas, including hibiscus mixed with black, which makes a lovely rose color and a HUGE scoby. But that was when I was drinking it by the glassfull, instead of adding the vinegar to my water . . .

I don't know about the staining, because I find the baking soda helps me a lot. I have heard about the peroxide and that is what most commercial " tooth whitening systems " use anyway . . .
