Sam, would you be willing to share your water kefir "recipe"? I tried using water kefir grains some time back, and it didn't work well for me at all. I am used to the dairy kefir grains, which work fine, but my water kefir grains never multiplied AT ALL, and they just didn't seem to be working right. I would love to hear your recipe, and also wonder if anyone in the Durham/Chapel Hill area has water kefir grains to spare.

Regarding the carb issue: it is called the "specific carbohydrate diet" for a reason - some carbs are excluded (all grains, all starchy vegetables such as sweet potatoes and potatoes, most legumes) but fruit and vegetable carbs are allowed because they are easier to digest. It has to do with the shape of the molecule, I believe, the disaccharides are out because they are hard to digest, the monosaccharides are okay because easier to digest.

i've been reading the posts about probiotics and we have major food allergies in my family and have not found one that we can take, so i've been making tons of water kefir and coconut kefir for my family to drink and so far so good. there are tons of recipes and its a very easy way to get my toddler to take his probiotics, he thinks its soda because ity's kind of carbonated. any way its worth a try and VERY cheap it cost me $8 for the water kefir culture and it just keeps growing and growing so much that i don't know what to do with it. you never have to buy more culture and it lives off of fruit and water so there's no dairy or other allergens. and the culture eats the sugar from the fruit, that's what makes it grow and work, so there's no sugar left in the final drink.i have a ? about diet and healing the gut, are you suppose to stay off all carbs? because the GAPS diet says fruits ok but no grains, even dried fruit is allowed, wouldn't the natural sugars in the dried fruit feed the pathogenic bateria?sam

the recipe i got was from the woman who i bought the grains off of and she says

it soooo

important to use the right water. only high mineral or spring water or else

they won't

grow. also the container has to be right. if your using a mason jar it needs to

be lined with

plastic wrap and do not close it too tight the best container is the glass jar

with the rubber

sealer so to allow pressure. for 3 cups you add grains to 2c water, 1c apple

juice with 2-4

tb. white sugar (this will get eaten up so not to worry) then 1- 2 inches of

fresh banana

thinnly sliced. let sit in a cuboard for 1-2 days then discard banana's or you

can re-use it,

you can also experiment with different juices but the apple juice makes them

grow the

best

The way I do water kefir is to add about a cup of rapadura to a quart and a half of tap water and however many grains I have. If I feel like flavor, I add dried fruit, fresh fruit, fruit juice or even grated ginger. Let sit on the counter for about 3 days. I do it in a big jar, leave it open for the first day or two, then seal it for the second half to get it carbonated. Taste it along the way - it'll start out sweet and flat, then the sweet goes away, then it turns sour - like vinegar. If you put too much sugar in, it might turn a bit alcoholic.

As for the grains multiplying, I just accidentally left mine for about a week or a little more, and it totally turned to vinegar AND all the grains multiplied like crazy - there are a ton of tiny grains now. BIL brews his with apple cores, and claims that's what makes them multiply.

I keep it sealed in either a mason jar or one with a rubber gasket and wire lock - I forget what they're called. It stays bubbly on the counter and in the fridge. I don't like things super-carbonated, though, so it might be kinda flat by some standards. Definitely fizzy, though

Where can I get water kefir grains to make this?

I only have the milk kefir grains.
