pork fat discovery

Hello y'all,

Well we made a discovery this weekend that I must share. I'm going to cross-post this on a few lists, so you might get it twice depending on what you have.

Anyway, DH had pulled out of our freezer some pork fat. I had purchased it long ago to make some lard with, but had never done it and so it wasn't in my " kitchen routine. " So it sat in the freezer for longer than I care to admit! LOL!

Yesterday I came into the kitchen, and to my dismay, he had cut it into little pieces and was pan-frying it. " Oh no! " I said. " I was going to render some lard out of that fat. " But then I saw that lard was indeed being rendered, though not in the way I had imagined. (I thought I'd do the oven method with a little water in the pan. I had read some detailed instructions once upon a time.)

But the real discovery was that those little bits of fried pork fat taste really delicious! (You need to add a little salt & pepper.) It's a slow way to get some lard, but it worked really great. And, nothing got wasted. We saved some of the lard for later, and fried some eggs in the pan. YUM!! So I'm really glad that DH just dug right in and cooked it, even though he sure wasn't doing it " right. " LOL!!

PS - this is especially good since bacon is no longer on our " acceptable food list. " We can't eat dairy at all, so this will be our " way out " of the bacon.
