Chicken Nuggets/ Corn and Yeast free Bread crumbs easy recipe .....

If you have a yeast allergy, egg allergy and a corn allergy like my

son does ... I make a yeast free bread ... (several different bread

mixes are out their ... I just leave out the yeast packet ... or

kinnikinnick makes a yeast free bread mix. I just choose whatever) I

use egg replacement ... use water or club soda for the water...

leave out baking powder if it calls for it ... use aluminum free

baking soda if it calls for it...) it is usually not yummy to

eat ... but it makes wonderful bread crumbs ... cook it and let it

dry out ... grind it up in a food or nut chopper ... then add

seasonings to it ....

usually (basil, marjoram, oregano) more of these spices (rosemary,

savory, thyme) less of these spices and just a dash or two of

sage ... they are all from the Mint family ... so if you are on a

rotation diet like we are ... it makes it easier.... You could add

any spice you like or leave out any one you can't use ..doesn't

really matter ... but I always try to keep it in the same family so

that it makes the rotation diet easier....

I make it in a large freezer bag ... use just what I need .. and have

many many left overs for future use .... Just freeze all the other

stuff ... I have been using it for weeks now and still have a lot

left. You can use the crumbs straight out of the freezer

It is a yeast free, egg free, corn free, gluten and casein free

Italian bread crumb mix.

To make the chicken nuggets then I put them in cold ice water for

awhile ... then batter them as typical. The ice cold water makes eggs

not necessary for the batter to stick. I oven fry them by adding

whatever type of oil I can use for the day to a bottom of a jelly

roll type pan ... put the breaded nuggets on it ... and add extra

bread crumbs for fun. Bake at 375 to 400 degrees for as long as it

takes to get crispy on both sides ... Need to turn them over as they

start to get crispy so both sides will do so ...

Thsse italian bread crumbs work great for anything you need them

for .. such as meatballs ... meatloaf .. battered food ... etc. My

children thought they were much better than anything we had ever used

prior ... like shake in bake ... or batter fry...

We have the almond allergy here, so I make them just like this, except with org.

brown rice flour ( it doesn't have to be org. or brown) , sprinklle a little

salt on the rice flour and dip into eggs, then flour, then fry in coconut oil.

They are TO DIE FOR!!! My teenage NT son says he could never go back to the

Mcs ones b/c these are so good. I have gotten really fast at this too. I

think I can make them faster than I can send my husband out to the McD

drivethru!!! ; )
