RE: GFCF Yeast free bread recipe !

I have never used a bread machine. I have only made bread once from

scratch, and that was before going gfcf.

Is this bread good to eat ?

And, what it is the brand of a bread machine that has a cycle 'gf' ?

Hi

This recipe isn't yeast free but is gfcf, corn free and soy free. Hope

it is of use.

My bread machine has an automatic gluten-free cycle. If yours hasn't,

then these are the settings:

Pre heat - nil

Knead 1 - 3 minutes

Knead 2 - 15 minutes

Rise 1 - nil

Knock down 1 - nil

Rise 2 - 25 minutes at 35 degrees Celcius

Knock down 2 - 30 seconds

Rise 3 - 30 minutes at 35 degrees C

Bake - 75 minutes at 110 degrees C

Take out immediately - don't leave in for the " keep warm " phase. Leave

in tin for 7 minutes, then turn out to cool. Allow to cool completely

before slicing. Freezes well.

Gluten free Rice & Besan Bread

470mls water

3 x 60g eggs

1/3 cup oil

1 tspn vinegar

1/2 cup brown rice flour

1/2 cup besan (chick pea flour)

2 cups white rice flour

1 cup arrowroot

1 tblspn Xanthan Gum

2 tblspns sugar

1 1/2 teaspns salt

2 teaspns yeast

Hi

The brand of the bread machine is “Sunbeam” the unit is called the

“Quantum Smartbake”. It is endorsed by the Coeliac Society (of

Australia) and supposedly they were involved in the development of the

gluten-free cycle and the recipes. I’m not keen on gluten free bread

but this one is rather nice – everyone in the house eats it . . . except

the ASD son that it was purchased specifically for!

Do you eat other breads than this, or does this work well enough that

it's what you eat.

Hi

There are other recipes in the book but seeing as this one is nice, I

haven’t got around to trying them yet.

I also use a “ready to go” gluten /dairy free bread mix – ie just add

water. Its available in supermarkets here from a company named

“Healtheries” in New Zealand. Their web site is

http://www.healtheries.co.nz <http://www.healtheries.co.nz/> which has

a description of their ready mixes.

I also do non gluten free breads in the machine. Smells lovely to have

bread cooking:-)
