Guest guest Posted December 31, 2004 Report Share Posted December 31, 2004 I want to take a stab at making some gluten free, yeast free, bread in a bread maker and am looking for input/recipes. I'm really lame when it comes to cooking, and actually a bit fearful of it so having to do all this diet modification is an extra burden to me. I was looking in one of the gluten free cookbooks, and it seemed like the recipes without yeast don't talk about making them in a bread maker. So I was wondering, is there no use to a bread maker without yeast? It's just that my friend is going to loan me her bread maker and it sounds so easy. Also I can't do sugar because of my daughter's horrible yeast issue. So will either go without, or I've been using glycerin lately which is GREAT and I think it's OK for her. All the store bought gluten free bread mixes had sugar in them already, so I'll need something from flour scratch. I recently made banana nut pancakes with 2/3 rice flour and 1/3 buckwheat flour and they were a hit. So those flours, or quinoa are good options. She's just burnt out on the store bought rice brand so I want to try something for her. I just get like deer in the headlights when it comes to cooking/baking-really sad. But I have 3 days off and a semi clean house, so no excuses to not try something adventurous like this! If anyone has any recipes that might work for my needs please let me know.
