Making yeast free/gluten free breads is more like making cakes than making " true homemade bread " . Homemade yeast/wheat bread requires of lot of kneading and rising, which is why using a bread maker makes homemade breadmaking so much easier. Yeast free/gluten free breads require no kneading and no rising time. So, your food processor or mixer will do just fine. Keep in mind that all those gluten free starches can feed yeast if she has a severe yeast problem. There are nut based bread recipes on pecanbread.com and scdrecipe.com. They will all be gluten free, sugar and yeast free. The hardest thing about baking from scratch is overcoming your own feelings of inadequacy in the kitchen. Just go and try.
