Let me apologize in advance if I mischaracterize your argument, but I've been tracking this discussion and this post has now confused me. It's quite possible I've missed something earlier on. Can you clarify?

(1) you have urged complex, LOW GI carb foods IIRC. But here you say don't worry about insulin peaks, which would seem to argue with the 'don't worry' idea.

(2) you also say " so insulin peaks don't mean excess glucose peaks. " I thought an insulin peak was a response to a glucose peak, so by the time you get to an insulin peak, it's too late to have any causal effect on a glucose peak.

Thanks for any clarification you can give.

An Insulin peak is just how far insulin was elevated during the meal. If the

meal is composed of low GI carb sources,

both the glucose & insulin peak will not be anything to worry about.

However mix in high GI carbs, fat, excessive cals and ALL bets are off!

Follow that Dr. Walford suggests in his book.
