Skin Rash related to wheat intolerance?

DS has been taking PB 8 probiotic in between meals, mostly on days

that he has eaten bread. He also takes AFP Pep and Zyme at every

meal, and a 1/3 NF capsule when he's had salicylates or phenol foods.

My question is: ever since adding bread or flour products on a

regular (1-2 times per week) basis, he has had an itchy rash on the

upper part of his back. Hydrocortisone calms it, but it seems to

come and go, and I just connected this to his having bread at night

with no probiotic the night before last--I hadn't seen the rash in

about a week, and I gave him PB 8 a couple of times yesterday even

though he had no bread...and today I noticed the rash was back,

looking pretty red today.

Does this sound like wheat intolerance to anyone? He has NO other

symptoms, other than having major tantrums a few hours after having

any flour products.

I am not sure I am using the PB 8 correctly, although I can tell

it's made a major improvement in his temperament. If he has

bread/wheat/flour and no PB 8 that day, he will have a major

meltdown.

Should I give the PB 8 every day, regardless of what's in the diet?

And is once or twice per day enough? I hate to see him avoid eating

any bread or flour at all (hate baking GF, what a pain).

I've also noticed that if he has flour with no sugar (pie crust on

fruit pie) he seems fine. If I give him regular white-flour

chocolate chip cookies (even with NF to help with the chocolate), he

will go off the deep end.
