Guest guest Posted February 2, 2001 Report Share Posted February 2, 2001 In a post yesterday (no quotes, sorry, I deleted it before the significance struck me) it was mentioned that injesting lemon or vinegar before a heavy carbo load actually reduced blood glucose levels. The person had a broccoli salad with vinegar and then ate a pizza (verry high GI). He measured his blood sugar levels and found they went down. It occured to me today that this is just what I often found in Italy. Often an antipasto with vinegar (be it seafood salad, artichokes etc) or a salad, then the meal, and again a salad with lots of balsamico afterwards. hmmmm...a way to cheat?
