Like, not sure if it is the gluten causing the reaction, or the other ingredients in whatever food was challenged. I was thinking, how about those wanting to challenge gluten, or wheat, just eat a bowl of Cream of Wheat. Isn't it just wheat? That way you would know whether or not it was the wheat (gluten), and not some other ingredient in the food. Has anybody done this? It just seems that even substituting wheat flour in a recipe that the child normally tolerates can result in inconclusive results, like, if it is a cookie recipe, was it the wheat, or a possible yeast reaction to the sugar , etc. just some thoughts.
