I did visit once for a few days. Germany is beautiful (to me). Enzymes are very good in helping with an assortment of eating problems. Particularly picky eating. My younger son was a very picky eater for several years until his third week on enzymes, and then BAM! he was eating everything he could find. I think there was some damage of some kind that the enzymes 'fixed'. I had taken him to the doctor for his eating and bowel problems 8 different times (this is after 2 years at a children's hospital where they thought it was psychological). The enzymes helped a great deal. I would suggest not doing GFCF right off. That can be tricky and expensive and there is a evidence it can promote bacteria and yeast among other things. Do you know if your son may have bacteria or yeast? The Peptizyde is an excellent enzyme to start with. Since some people do better with Peptizyde and no GFCF diet than with the diet, that may work better. It is hard to say. But if you decide to you other enzymes you may want to try the GFCF along with them. What would be relatively easy (and cheap) to do is take out dairy for 4-5 days and see if there is any improvement. This is quick and that way you could see if there is a problem with dairy. Dairy can be a problem for a number of reasons (lactose intolerance, casein, phenol intolerance, histamine). Then if you decide to try enzymes, do that and see if there is improvement. Then if there is no improvement, try more food eliminations. This is just my opinion, but it seems like the likely progression. There is no one right or wrong way to do this. One of the main things secretin does is to improve the function of your natural digestive enzymes. So it can be more efficient (and less expensive) to just give the enzymes. In the meantime, you can try giving your son a little baking soda (1/4 teaspoon or so) after eating. It may be called bicarbonate of soda there - like what you cook with. That may help his digestion too. This mimics what the secretin does. This is what is in many antacids so it is safe and can be very effective. It may help with the throwing up too.
