Gluten-free Baking: Expandex Modified Tapioca Starch

Not everyone is into baking bread, and not everyone is into

experimenting with Expandex, a new modified tapioca starch created by

Corn Products.

For those who are, I've documented my testing on two different, but

related, recipes. Both yielded a good bread that didn't crumble and

was capable of making sandwiches. You can view the results on:

I'm interested in hearing about other successes using this new product.

Please note: I have referenced Celiac Specialties, LLC, the vendor

from whom I purchased Expandex. I have no financial interest in this
