On a separate note, do any of you live in the Peninsula? I'm in City and would learn to love where you shop or mail order your food. Any ideas for a good stuffing and other Thanksgiving type foods? Hi- I'm in San Mateo and feed a GF husband and 1 year old daughter (who also don't eat corn so that further limits the options). They are able to eat pretty well on what we can get from Whole Foods, Trader Joes and Draeger's. The majority comes from WF & TJs but there are some GREAT snacks and mixes etc you can get at Draeger's (if you're not familiar with it it's a high end grocery store at 4th & B Street in downtown San Mateo). Draeger's also has the 'I Can Eat That' pizza shells which (once I finally got some last month) I have to agree are the best I've had to date (other than the recipe I made up to make them from scratch but we don't always have time for that). If you aren't familiar with any of these stores and want to know some of the things they have and where to find them in the actual stores, feel free to email me! Like I said, between these 3 stores we get pretty much everything we need. The Safeway on El Camino near 92 in SM (I don't know about the Safeway in FC) also has an increasing number of GF items in their 'natural food' section which is great. I'm not on top of what they have though because I only go there about 1 or 2 times a year (I live 2 blocks from TJ's so its our main grocery store). As for stuffing, I've had REALLY good luck following any old stuffing recipe and just using GF bread (and other GF ingredients). You just have to be careful to choose or make a GF bread that's not too moist or chewy. One thing I can say is DO NOT use the Food for Life breads for this. They are way too sticky and the stuffing comes out a chewy glop. I have successfully used the ener-g sandwich breads (I don't think they taste so great as bread-especially the brown rice one- but they're the perfect texture for stuffing and taste fine in there). I think the Whole Food's sandwich bread would probably work fine too. No matter what you use, just cut it up in cubes and either dry it overnight in your oven or lightly toast them in the oven (don't over dry though. And toasting before cubing doesn't work either. At least not alone-you'll still need to dry them after that because you want all sides of the cube to dry out a bit). There are also rice stuffing recipes that can be yummy. But if you're a traditionalist and like bread stuffing just go for it. I think you might even be able to find a mix or two on the market (I seem to remember there was one or two but I wrote them off in my memory because they had corn) but homemade stuffing is so much yummier than mixes anyway.
