Guest guest Posted May 16, 2006 Report Share Posted May 16, 2006 Dear Bay Area Celiacs, Blue-veined cheese is traditionally made in Europe by tossing a loaf of extremely moldy bread into the curds - at least according to a cheese book we checked out of the library. But Dr. Green, in the recent book, said to check manufacturers in the US because many use " chemical starter. " It would be good to ask Trader Joes the question, but I haven't yet. I did ask the Treasure Cave Blue Cheese people. You can get Treasure Cave at Safeway and many other supermarkets.
