Basic chicken in a crockpot

When I do chicken in a crockpot, I do it similar to a beef roast

(easy way). I just put in a whole chicken, washed and with the guts

removed. (important part many newers cooks overlook LOL)

I add a can of Swanson chicken broth instead of water, either the

regular or the new roasted garlic version. Throw in any veggies you

want to -- carrots, onions, celery. Season as you wish, maybe adding

fresh cloves of garlic. Old Bay Seasoning is a tasty one for chicken.

With this chicken which I cook all day, it falls off the bone. Hubby

and I will usually eat some of it for supper that first night. Then I

pick all remaining meat off the bone, removing all the skin and

tossing it with the bones. I use the chicken and the broth the next

day or 2 in something like chicken & ravs (which some people refer to

as tortellini, but around these parts we call 'em ravs). Or maybe

creamed chicken to put over rice or noodles. (I personally don't do

rice, rarely do pasta...sometimes just do the creamed chicken for

hubby and I eat the creamed chicken in a little bowl, no carbs)

Occasionally I'll just do chicken with the broth, cloves of garlic

and squeeze in the juice of a fresh lemon, for easy lemon garlic

chicken.
