I went to Ruby Tuesday's the other day and what a pleasant surprise. They now have a seperate " LOW-CARB " menu.....how cool is that??? They have everything broken down so you know exactly how many carbs you are getting---even broken down to include just NET CARBS. The entrees are served with " cauliflower mashed potatoes " and steamed broccoli and if you get any of the wrapped burgers---including a very good wrapped turkey burger they are served with BBQ pork rinds. The menu is actually quite extensive----including a piece of cheesecake, made with splenda with a chopped nut crust---only 4 carbs. Guest guest Posted December 1, 2003 Report Share Posted December 1, 2003 I've made the cauliflower mashed " potatoes " at home and they're quite good, but I didn't like what they served at Ruby Tuesday's and neither did DH (he's the one doing low carb). He loved the burger wrap though. Personally, I like their French onion soup & salad bar combo (LOVE their salad bar) or the spicy BBQ chicken fingers. Guest guest Posted December 2, 2003 Report Share Posted December 2, 2003 The way I make it is to steam some cauliflower until it's soft, then mash it with butter, cream and whatever else I'd put into mashed potatoes. It doesn't taste exactly like mashed potatoes if you eat it plain (as in " healthy " mashed potatoes the way we used to make them, with chicken broth and nothing fun), but if you add stuff like butter, cream, cheese, S & P, sour cream, bacon, whatever (not all those things at once, just whatever you'd put into potatoes) they taste good. I love cauliflower so I'd eat them even if the taste wasn't " hidden " , but my husband hates cauliflower and if I add a little butter, cream, parmesan and S & P, he loves them.
