I made up a new crockpot "dump a bunch of random stuff in the pot" recipe. This one is a keeper! I had half a bag of powdered queso tortilla soup (Safeway brand). I put that in with four chicken breasts, a can of corn, a can of kidney beans, a big can of diced tomatoes and a little water. What a great smell to come home to.

Last night we had whole breasts and sauce on rice and it was pretty good, but a bit mild. Tonight, when I went to have leftovers I decided to shred the chicken and eat it like soup. Turns out the majority of the cheese powder was stuck to the bottom! LOL! Man - it was good!

I also came up with a new gluten-free treat. I was feeling sorry for myself because I couldn't have crackers or toast with my soup and we didn't have any tortilla chips. For some reason I decided to toss a couple corn tortillas in the toaster and they were awesome! By the time all was said and done, I had toasted about 8 tortillas and DH, DD and I were all gathered around my soup dipping away. :o)

I use coconut water in my smoothies to cut down on the fruit juice and add

whatever fruit I have on hand to flavor, apples, mango, etc. More fiber that

way. I also always throw in some sort of green to up my greens intake.

baby spinach, celery, kale, etc. You don't taste it. I use stevia to

sweeten.
