I have a friend who figured out the diet thing way better than me.

Here is some info she sent me:

> To use stevia, just use 1/16 of a teaspoon iin place of anything

that calls for sweetner. It is 300 times sweeter than sugar so be

careful...can be VERY sweet. I just plop that little spoon of it in

things and pray the recipe will come out good without the pounds of

sugar. Xylitol-good for teeth, natural, read good stuff...then I

read it can be harmful. I guess everything can if used in excess but

my gut tells me to stick with the stevia....

> Bread Recipe: (as dictated by hubby by heart)

> 2 cups garbanzo bean flour

> 1 cup potato flour

> 1 cup tapioca flour

> 2 tablespoons xanthan gum

> 2 tablespoons baking powder

> 2 teaspoons salt

> 1 smidgen stevia (got these TINY spoons-one actually says smidgen

on it-that is how I measure stevia)

> 3 eggs (we use egg replacer)

into loaf pan. Bake for 1 1/2 hours approximately-don't worry if it

the cooktime will be much less-I just bought a le creuset loafpan but

for now I am using pyrex and the pyrex doesn't conduct heat well so

it takes the bread a long time to cook.

you have to toast it before eating anyway. It is impossible to make

gfcf yeast free, everything free bread without having to toast it. I

guess gluten helps make bread taste good when it isn't toasted.

flour, 1 cup quinoa flour, 1 cup garbanzo bean flour. I also skip

the sugar and use my smidgen :) of stevia. Also, once it is all

mixed, keep adding water in until you get the consistency you like.

I tend to like it thicker-it makes a puffy, yummy pancake :)
