Here is some info she sent me: > To use stevia, just use 1/16 of a teaspoon iin place of anything that calls for sweetner. It is 300 times sweeter than sugar so be careful...can be VERY sweet. I just plop that little spoon of it in things and pray the recipe will come out good without the pounds of sugar. Xylitol-good for teeth, natural, read good stuff...then I read it can be harmful. I guess everything can if used in excess but my gut tells me to stick with the stevia.... > > Bread Recipe: (as dictated by hubby by heart) > 2 cups garbanzo bean flour > 1 cup potato flour > 1 cup tapioca flour > 2 tablespoons xanthan gum > 2 tablespoons baking powder > 2 teaspoons salt > 1 smidgen stevia (got these TINY spoons-one actually says smidgen on it-that is how I measure stevia) > 3 eggs (we use egg replacer) > 2 2/3 cups water > 2 tablespoons olive oil > > Combine dry ingredients. Mix on low with wet ingredients. Pour into loaf pan. Bake for 1 1/2 hours approximately-don't worry if it rises too much, it drops some. Oh, and coat baking pan with coconut oil (you will like this one). It is impossible to make gfcf yeast free, everything free bread without having to toast it. I also skip the sugar and use my smidgen of stevia. Also, once it is all mixed, keep adding water in until you get the consistency you like.
