I'm coming out of lurking to post a recipes then I'll be going back into lurking mode. :-) This recipe comes from my ex-SO who once gave me permission to enter it into a cookie contest so I guess it's okay to post it here. I don't make these that often, don't have the recipe for my favorite cookies [Chocolate Times Three] as a Word doc. I'll see if I can put that one together. CatmanLou [with his cats Bella and Sammy F.C. in blustery San Francisco] Hoosier Peanut Bars Sift together: 2 cups sifted flour 2 tsp. baking powder 1 tsp. baking soda 1 tsp. salt Cream 1/2 cup butter. Add gradually, mixing well: 1/2-cup sugar and 1/2 cup firmly packed brown sugar. Blend in 2 egg yolks and 1 tsp. vanilla. Add 3 tbs. water alternately with the dry ingredients. The dough will be very stiff. Press the dough into a well-greased 15x10 shallow pan. Sprinkle 1 1/6 cups chocolate chips over the dough and press in gently. Beat 2 egg whites until foamy. Gradually add 1 cup firmly packed brown sugar and beat until stiff. Spread this mixture over the chocolate chips. Top with 3/4 cup chopped salted peanuts. Bake in a 350° oven for 30 to 35 minutes. Cut into bars while still warm. PersonalsSingle? There's someone we'd like you to meet.Lots of someones, actually. Personals Jackie
Guest guest
I used oil instead of butter, halved the sugar and used sweet sourgum flour. Bit hit with the kids http://allrecipes.com/Recipe/Chewy-Coconut-Cookies/Detail.aspx
