Heating it distroys the enzymes so it's even harder to digest. Since it's not that hard to eliminate, I believe that is should be one of many steps in trying to help your child be all that they can be. Eliminate for 3 months -- if you don't see any benefit -- go back to dairy. After nearly 2 years of no dairy, we have successfully added a little bit of goat butter and cheese.
