Green leafies and things in the cabbage family (cruciferous veggies like

broccoli and cauliflower), green beans, etc are relatively low in carbs and

calories.

Other types of beans, root veggies (beets, carrots and so forth), corn, peas,

and most tubers --starchy things-- are generally high in carbs (and

calories). Sweet potatoes (yams) are good for you, though, and don't have

anywhere near as high a glycemic value as regular potatoes. Lentils and

" hard " beans (my name for 'em) also have a lot of nutritional value, even tho

they're kinda hi in carbs.

I recall that carrots and tuber vegetables were big no-no's in the

I love carrots... and now I feel a twinge of guilt whenever I put them in

soups or salads :(

No need to feel guilty. Ya gotta use a little common sense when you're

deciding what carbs to eat. Certainly a coupla carrots are far better for a

person than a coupla frosted donuts! The carbs in carrots are complex carbs

so not in the same category as the simple carbs in refined sugar products;

and carrots have a lot of very useful nutrients that far outweigh any extra

carbs.

Now go munch on a carrot. And enjoy it.
